Indian Railways Takes Major Steps to Provide Hygienic & Quality Food for Passengers

Indian Railway

Indian Railways is committed to enhancing passenger satisfaction by ensuring the availability of clean, safe, and high-quality food onboard trains. A series of measures have been implemented to improve food quality, hygiene, and monitoring standards across its catering services.

Advanced Base Kitchens for Quality Meals

To streamline food production, Indian Railways now sources meals from designated Base Kitchens equipped with state-of-the-art facilities. Several modern kitchens have been commissioned at key locations to ensure better cooking practices. CCTV cameras have been installed in these kitchens to monitor food preparation in real-time, ensuring every step meets high hygiene standards.

Branded Raw Materials for Consistency

For consistent taste and quality, Indian Railways has shortlisted popular branded raw materials such as cooking oil, atta (flour), rice, pulses, spices, paneer, and dairy products. These quality ingredients guarantee that passengers receive wholesome and nutritious meals.

QR Codes and Food Safety Supervisors

To improve transparency and trust, food packets now come with QR codes. Passengers can scan these codes to view essential details such as the kitchen’s name and the packaging date. Additionally, trained Food Safety Supervisors are deployed at Base Kitchens to oversee food safety and hygienic practices during preparation.

Regular Inspections and Certification

Ensuring compliance with the Food Safety and Standards Authority of India (FSSAI) norms is a top priority. All catering units must have FSSAI certifications issued by designated Food Safety Officers. Regular inspections, including surprise checks by Railway and IRCTC officials, keep standards in check. Food samples are also tested routinely to maintain quality.

Deep Cleaning and Pest Control

Base Kitchens and Pantry Cars undergo rigorous deep cleaning and pest control every 15 days. These measures help maintain a clean and hygienic environment for food storage and preparation.

Diverse Menus and Regional Delicacies

Indian Railways has introduced a rationalized menu that caters to diverse passenger preferences. Regional cuisines, seasonal delicacies, diabetic-friendly meals, baby food, and health-conscious options like millet-based dishes are now available onboard.

Continuous Staff Training

Catering staff receive regular training focused on customer service, including communication skills, courteous behavior, personal grooming, and hygiene. This ensures passengers experience high-quality service along with their meals.

Pre-Notified Tariffs and Transparency

Food items onboard are sold at pre-notified tariffs, ensuring fairness and transparency. Passengers are informed about menu options and rates through SMS, emails, and displays by waiters. Awareness campaigns also help passengers understand the value of the meals provided.

Independent Audits and Surveys

To maintain high standards, Indian Railways conducts third-party audits to assess food quality and hygiene in Base Kitchens and Pantry Cars. Regular customer satisfaction surveys provide valuable feedback for continuous improvement.

With these comprehensive measures, Indian Railways is setting a benchmark in food quality and hygiene, enhancing the overall travel experience for millions of passengers every day.
